Christmas Sugar Cookie Truffles

INGREDIENTS: 

12 sugar cookies  

4 tbsp. cream cheese 

2 cups white chocolate melting wafers 

Sprinkles 

PROCEDURE: 

  1. Line a cookie sheet with parchment paper.  
  1. Place sugar cookies in a food processor and process until cookies become fine crumbs. Add cream cheese and combine well.  
  1. Shape cookie mixture into balls about 1 in. in diameter. Place on cookie sheet and freeze for 15 to 20 minutes. 
  1. In a bowl, melt white chocolate. Remove the cookie truffles from freezer. 
  1. Using two forks, dip and roll chilled truffles. Immediately top with sprinkles. Repeat process for remaining truffles.
