Sweet Potato Dumplings

INGREDIENTS: 

2 packages crescent rolls 

8 sweet potato patties (cut into halves) 

Topping: 

2 cups sugar  

1 tbsp. cornstarch 

1 tsp. cinnamon  

2 cups cold water  

1 ½ stick butter 

2 tsp. vanilla 

PROCEDURE: 

  1. Preheat oven to 350°F.  
  1. Wrap half of a sweet potato patty into the crescent roll. Close ends and wrap tightly.  
  1. Mix all topping ingredients. Heat in microwave for 3 minutes. Stir and pour over dumplings. 
  1. Bake for 45 minutes or until golden brown.
